Asian Flavors

Chickpea and Vegetable Curry

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 2 teaspoons curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon turmeric

  • 1 can chickpeas, drained and rinsed

  • 1 can diced tomatoes

  • 1 can coconut milk

  • 2 cups chopped vegetables (bell peppers, carrots, spinach)

  • Salt and pepper to taste

  • Brown rice or quinoa for serving

Instructions:

  1. Sauté onion in olive oil until soft. Add garlic, ginger, and spices, cooking for 2 minutes.

  2. Stir in chickpeas, diced tomatoes, and coconut milk. Simmer for 10-15 minutes.

  3. Add vegetables and cook until tender.

  4. Serve over rice or quinoa and garnish with fresh cilantro.
