Healthy Oat Pancakes

Ingredients:
- 1 cup rolled oats
- 1 ripe banana
- 1 cup plant-based milk (like almond or soy milk)
- 1 tsp baking powder
- 1 tsp vanilla extract
- A pinch of cinnamon
Instructions:
1. Blend all ingredients until smooth.
2. Pour batter onto a heated non-stick pan.
3. Cook for 2-3 minutes on each side until golden brown.
4 Top with fresh fruit, almond butter, or a drizzle of honey.
