Quinoa and Black Bean Stuffed Bell Peppers

Ingredients:
4 large bell peppers
1 cup quinoa, rinsed
1 can black beans, drained and rinsed
1 cup corn kernels
1 cup diced tomatoes
½ cup diced red onion
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
Salt and pepper to taste
1 cup shredded cheese (optional)
Fresh cilantro for garnish
Instructions:
Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
Sauté onion and garlic, then add quinoa, black beans, corn, tomatoes, and spices. Cook for 5 minutes.
Fill bell peppers with mixture and place in a baking dish. Cover with foil and bake for 25-30 minutes.
Remove foil, sprinkle cheese, and bake for another 5 minutes.
Garnish with fresh cilantro and serve.
