Vegetable Quinoa Soup

Ingredients:
1 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried oregano
½ tsp smoked paprika
1 cup quinoa, rinsed
4 cups vegetable broth
1 can diced tomatoes
2 cups spinach or kale
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Sauté onion, carrots, and celery in olive oil for 5-7 minutes.
Add garlic, thyme, oregano, and smoked paprika. Cook for 2 minutes.
Add quinoa, broth, and tomatoes. Simmer for 15-20 minutes.
Stir in spinach or kale. Season and serve with fresh parsley.
