Vegetable Quinoa Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp smoked paprika

  • 1 cup quinoa, rinsed

  • 4 cups vegetable broth

  • 1 can diced tomatoes

  • 2 cups spinach or kale

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

  1. Sauté onion, carrots, and celery in olive oil for 5-7 minutes.

  2. Add garlic, thyme, oregano, and smoked paprika. Cook for 2 minutes.

  3. Add quinoa, broth, and tomatoes. Simmer for 15-20 minutes.

  4. Stir in spinach or kale. Season and serve with fresh parsley.
