Italian Flavors

Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients:

  • 4 medium zucchinis, spiralized

  • 1 cup cherry tomatoes, halved

  • ¼ cup basil pesto

  • 2 tablespoons pine nuts, toasted

  • Grated Parmesan cheese (optional)

  • Salt and pepper to taste

Instructions:

  1. Sauté zucchini noodles and cherry tomatoes for 3-4 minutes.

  2. Stir in basil pesto.

  3. Remove from heat and serve topped with pine nuts and Parmesan (if using).
