Mediterranean Flavors

Mediterranean Chickpea Salad

Ingredients:

· 1 can (15 oz) chickpeas, drained and rinsed

· 1 cup cucumber, diced

· 1 cup cherry tomatoes, halved

· 1/2 cup Kalamata olives, pitted and halved

· 1/4 cup red onion, finely chopped

· 1/4 cup fresh parsley, chopped

· 2 tablespoons extra virgin olive oil

· 1 tablespoon lemon juice

· 1 teaspoon dried oregano

· Salt and pepper to taste

· Crumbled feta cheese (optional)

Instructions:

1. In a large bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, halved Kalamata olives, chopped red onion, and chopped parsley.

2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.

3. Pour the dressing over the chickpea salad and toss gently to coat all the ingredients.

4. If desired, sprinkle crumbled feta cheese over the salad for added flavor and creaminess.

5. Serve the Mediterranean chickpea salad chilled or at room temperature as a refreshing and nutritious side dish or light meal option.
