Quinoa and Black Bean Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers

  • 1 cup quinoa, rinsed

  • 1 can black beans, drained and rinsed

  • 1 cup corn kernels

  • 1 cup diced tomatoes

  • ½ cup diced red onion

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • Salt and pepper to taste

  • 1 cup shredded cheese (optional)

  • Fresh cilantro for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.

  2. Sauté onion and garlic, then add quinoa, black beans, corn, tomatoes, and spices. Cook for 5 minutes.

  3. Fill bell peppers with mixture and place in a baking dish. Cover with foil and bake for 25-30 minutes.

  4. Remove foil, sprinkle cheese, and bake for another 5 minutes.

  5. Garnish with fresh cilantro and serve.
